Stuff and Things

Friday is the big move day.
Moving sucks.
Did you know that?


In the process of sorting, purging, and packing I have discovered that I own six sets of measuring cups. Six. Excessive? How did that even happen? So you'd think that at least 2 of those sets would have made it into the "Donate" pile...... nope. Not a single one. I couldn't do it. I may have issues....


Moving also makes me eat food like this:
I KNOW! I said I was taking it easy on the carbos because of the beach trip! T-minus 9 days....... GAH
But I gotta get rid of food stuff so that I don't 1) have to move it, duh. & 2) go spend all my monies at the grocery store when the movers are guna want some of it.


Buuuuuut, moving also makes me eat things like this:

I did, however, go through my entire closet last night. I sorted clothes, packed up the winter ones, threw a bunch in the "donate" pile, and got all the loose stuff and randoms into boxes. So, I kind of worked it off? Kind of.
I did run in the Capitol 10K this past weekend- my bum is still feelin it. I didn't really train for it or anything, I've had a major running mojo-loss lately. I finished, and I did really well pace-wise. Which I'm still trying to figure out. But oh-em-gee I was pooped! The entire day on Sunday was almost completely unproductive. I came home and cleaned up, packed up one box of kitchen-ish things and then called it a day. Which means watching Big Bang Theory. Bazinga.


Today & tomorrow I will be packing up the kitchen supplies. I know that they are coming out of the boxes on Saturday, but it still makes me sad to pack them. Is that normal? I have a few recipes just waiting to be created, so hopefully I will be back and cooking shortly! Stay tuned friends.

Lime Chicken with Fresh Salsa

You put the Lime chicken in the Coconut oil, and heat 'em both up.....

So, I thought it was time for a savory post. Too many sweets around here lately and I have a date with the beach in 3 weeks. SO, once again it's ciao to the carbo's and hello gorgeous to the lean proteins and veggies!


I've been on a serious coconut kick for, oh, almost a year now. It's been one of my healthiest serious relationships to date (buh duh ppsshh) and I am now the proud owner of a brand spanking new jar of Coconut Oil! I know, a little late on this band wagon, but it's now available in regular people grocery stores here.
btw: have you read the 52 uses for Coconut Oil?


This recipe was not complicated, or ingenious to be honest, but it is friggin tasty. And seriously good for you. Was the perfect dinner after bootcamp on Monday night.


I thought they were edited nicely. Fail.

Lime Chicken with Fresh Salsa
I cooked for one- adjust measurements accordingly.

1 boneless skinless chicken breast
2-3 tbs lime juice
salt to taste
2 tsp coconut oil
1 medium tomato
1 medium onion
1 medium jalapeno- seeded. or not, some like it hot. heeeyyy

Marinate chicken in lime juice and salt- 10-15mins.
Heat coconut oil in skillet on medium heat. When melted and hot, cook the chicken until it's....well, cooked.
While chicken is cooking, chop the onion, tomato and jalapeno and combine in a bowl. Toss in some lime juice and salt if preferred.
When chicken is cooked through, plate and top with salsa.
Enjoy!

SO tasty. Now I just need a Pina Colada.

One Mug Lava Cake- from the microwave!

One Mug Two People Microwaved Lava Cake

2oz dark chocolate bar (60%)
4 tbs butter
3 tbs sugar
3 tbs whole wheat pastry flour
1 egg
white chocolate truffle (like Lindt)
Caramel Sauce

In a microwave safe bowl, melt chocolate and butter in microwave- 30 secs. Stir until completely melted.
In another bowl, whisk egg and sugar together. Pour the egg/sugar in with the melted chocolate, then slowly add the flour.
Pour half the batter into a greased coffee mug (extra large mug, or split between two mugs). Pop in the truffle and then cover it with the rest of the batter.
Microwave for 1.5mins. Make sure to watch it as it will rise! Let cake sit for a min or two before plating. Drizzle caramel sauce on top and devour!

It's a dark chocolate mug cake with white chocolate lava topped with caramel. It's cooked in the microwave and you can make it in 3 mins easy!

M&M Cookie Pie

I'm baaaaaaack! Anyone miss me? 


I wish I could say that I was away on some terrific adventure, or that I have been so inspired to create magical dishes that I have been too busy in the kitchen with a knife in one hand and a spatula in the other to blog anything.... buuuuut, no. I have been just busy with life-things. Adult things, really. Like going to work and being super busy every day, apartment hunting (which may be as much fun as bra shopping- ack), and thinking a lot about packing, cleaning, and making a giant Goodwill donation trip- but not actually doing any of it.


Oh, I'm getting stressed just thinking about it.
Cookie pie, anyone?




Part of my birthday package from my mother last month included a large stack of mail, and a container of M&M's shaped like the great state of Texas.


Awesome.


I wanted to make cookies, but I didn't want to make cookies. I didn't feel like I had the patience to ball up all the dough and then clean several cookie sheets so I decided to dump the entire bowl of batter into my pie pan and voilĂ ! Cookie pie.


I'm not calling it cookie cake because I baked it in my pie pan. Live with it.




M&M Cookie Pie
1cup + 1 tbs  AP Flour
1/4 tsp baking soda
3/4 cup butter softened (I used "light" country spread)
1/2 cup brown sugar
1 egg
1 tsp vanilla extract
1 Texas shaped container of M&M's- OR- 1-ish cup.

Preheat oven to 325*
Cream butter and sugar. Add in egg and extract and blend. The combine flour and baking soda- mix until completely incorporated. Fold in the M&M's. Dump into a greased 9.5" pie pan and bake for 25-30 mins. You know the drill, when a toothpick/ridiculously small pairing knife comes out clean it's donzo.
Cool, cut into cookie pie slices and enjoy!

*FAQ's*-
"No white sugar?"- NOPE. the brown sugar and M&M's are the sweet in this recipe.
"Can I bake it in an aluminum pie pan?"- you sure can!
"what's the texture like?"- it's a cake-like cookie. NOT a greasy thin cookie cake like you get at a supermarket.
"It came out flour-y tasting"- well, you did not measure your flour correctly....
